06.09.2011 смотреть >>Pistachio meringues
Originally published at Yellow Chimney. Please leave any comments there. Meringue is one of the favourite deserts of my childhood. How can you not love this crispy breakable shell with sweet and sticky-toffee like centre? Who wouldn’t love holding it in one hand and catching crumbs with the other? But to be honest in my childhood everything was a little simpler than now. We didn’t have chocolate, strawberry, lemon and all those yummy meringues, we only knew plain white ones, no flavours, no colours. And today choosing a meringue recipe to cook you’ll never be fascinated with a plain white one, right? Because of all that variety you have around. So let us make it pistachio meringues. We’ll use the French method, the one that looks the simplest, yet has some tricks. Recipe: (makes 8, cooking time 30 minutes + 2-3 hours to chill) Read the rest of this entry »

20.01.2011 смотреть >>Milk soufflé
Originally published at Yellow Chimney. Please leave any comments there. In Russia we call it literary Bird Milk. Probably, because it’s milky, creamy but yet heavenly light and airy. And every time the name turns in conversation follows a discussion where in Russia they make the beat Bird Milk. I don’t really want to defend chocolate factory in my home city but let me just say this: Bird Milk was invented in Vladivostok and therefore I consider it to be the most authentic and therefore I try to achieve that particular taste making milk soufflé myself. Recipe: (makes 6, 20 minutes hands on + 1 hour 30 minutes to set) Read the rest of this entry »

Easy peasy Easter treat
Originally published at Yellow Chimney. Please leave any comments there. How do you start your Easter Sunday? Is it a trail for kids or a basket full of eggs set up on the breakfast table? My Easter bunny loves playing hide-n-seek with kids. He leaves some foot prints here and there to lead my youngsters to their chocolate treat. Then we continue with some Russian traditional foods like Easter bread (I’ll post the recipe a little later before the Orthodox Easter which is 1 May this year). And I also make some special deserts that will look interesting for children. I can tell you, it’s so easy here in UK, where there are very clear and pretty symbols connected to Easter, comparing to Russia, where the only symbol will be the Holly Cross. I love those bunnies, chicks, sheep and pastel colours and flowers and eggs and birdies. So this year we made some nest with chocolate eggs – so bright and shiny! Read the rest of this entry »

22.03.2016 смотреть >>Mille-feuille (just classic one)
Originally published at Yellow Chimney. Please leave any comments there. When it comes to choosing between ready-made ingredients and spending 3 more hours in the kitchen making your own pre-cooked ingredient… I deny any logic and choose to cook myself. Pistachio paste, almond meal, fruit puree, small meringues and puff pastry. I know, it can be easily found in any supermarket. It is cheap and gives predictable result, but… let’s say I just prefer it freshly made. I honestly don’t know, what’s the point, but I really do love homemade puff pastry better. And when the reason for puff pastry is mille-feuille, you just can’t walk on this classic piece of fine French cuisine in your dirty wellies and cook it with shop bought pastry. So let’s pretend ourselves chefs and make some perfect “dessert of thousand petals” from the beginning to the end. Recipe Read the rest of this entry »
